Frittaten (pancake strips)

The word “frittata” comes from Italian, or from the Latin “frictella”. Even today, the words “frittata” and “frittella” are used in Italy to signify an omelette or “pancakes”, and “fritello” means “fried (in oil)”.

Recipe for 4–6 portions
1/4 l milk
3 eggs
140 g flour
Salt

Season the milk with a bit of salt, and stir to a smooth batter with the eggs and the flour. Heat up a bit of oil in a flat pan and pour in enough batter to thinly cover the bottom of the pan. Fry first the one side, then the other side to a light brown.

After allowing to cool, cut the disc in half once and then slice into even strips.
