Kaiserschmarren
Recipe for 4 portions
3/16 l milk
100 g flour
4 eggs
30 g sugar
50 g butter
40 g raisins
Season milk with salt and stir to a smooth batter with 4 egg yellows and the flour.
Beat a stiff foam out of the 4 egg whites and the sugar, and fold this foam into the batter.
Heat butter in a flat-bottomed pan, pour in the batter, fry, sprinkle on the raisins, turn and finish frying over moderate heat.
Shred the mass into small pieces while it is still in the pan, and then place this in the oven briefly to dry out.
Sprinkle on powdered sugar before serving.
Tip: serve with plum or pear compote.
